Some of my dear readers are also aware that I recently completed a wonderful adventure. It was a daunting personal challenge and a celebration of the good health I regained from eating beneficial, gluten-free foods and following a program of yoga and moderate exercise. From September 2 until September 30, 2014, I hiked solo 400 miles across Spain on the Camino de Santiago. The Camino is an 800 year old pilgrim route. Everything I needed for the journey, except food, I carried in a pack on my back. It was challenging but magical and uplifting, especially in light of the medical problems that had limited my activities just a few years ago.
Although it's a bit off the topic of gluten-free cooking, several folks have asked me to post some photos of the experience. And so, if you are interested, you can find some of my Camino de Santiago photos posted on this page below the photographs of my dishes.
