The recipes in this book are healthy and are made with fresh ingredients. In it, I share recipes with you that I enjoy and which support my overall well-being. I do not eat many simple carbs and so you won’t find them in this book. Instead, you will find recipes that are chock full of flavor and combine healthy, complex carbs with plant-based protein.
Recipes include Eggplant Lasagna (the eggplant itself becomes the noodles!), Mu Shu Wraps, Roasted Spaghetti Squash, and a Thai Style dish that will knock your socks off!
